Banana Loaf or Muffins

 


Combine:

            1 ½ cups flour

            3/2 cup granulated sugar

            1 tsp. baking powder

            ¾ tsp. baking soda

            ½ tsp. salt

            1/8 tsp. nutmeg

            ½ tsp. cinnamon

 

 

Beat together:

            1 egg

1 ½ cups mashed bananas (approx 3 large)

            ¼ cup vegetable oil

Add banana mixture to dry ingredients and stir until just moistened.

 

For Loaf:

Pour into baking pans that have either been pre-greased or lined with wax paper and bake in 350ºF (180ºC) oven fro 45 to 60 minutes. (Time depends on size of pan)

 

 

For Muffins:

Fill greased or paper lined muffin tins. Bake at 350ºF for 20 – 25 minutes.

 

***Sprinkle some crushed Frosted Flakes or brown sugar on top of batter efore baking.

 

Note: When bananas are on sale, peel and freeze in quantity needed for your recipe. When ready to use, they taw out quickly.

 

This recipe doubles or triples well and freezes well too.
