Fruit Cake
Ingredients:
| 1 cup butter |
| 8 oz. cream cheese |
| 1 ½ cups granulated sugar |
| 1 tsp. vanilla |
| 2 tsp. grated lemon rind |
| 4 eggs |
| 1 ¾ cups all purpose flour |
| 1 ½ tsp. baking powder |
| ½ cup seedless raisins |
| ½ cup golden raisins |
| ½ cup glazed fruit (or substitute 1 cup cooking gum drops) |
| ½ cup red cherries |
| ½ cup green cherries |
| ½ cup chopped nuts |
In a large bowl mix together all of the butter, cheese, sugar, vanilla, lemon rind and eggs. Mix together 1 ¼ cups flour and all of the baking powder and sift into mixture. Add remaining flour to the raisins and fruit, then, stir this mixture along with the cherries and nuts into the butter mixture.
Place in a baking pan and place in a preheated 300˚F oven for 70 to 90 minutes. (I also place a small bowl of water in the oven). Check for doneness with a straw.
